Canning tomatoes

Jeff and I stayed up Friday night and canned tomatoes. He blanched the tomatoes and I blended the green pepper and onion with the prepared tomatoes. We had all the tomatoes in the jars and had just started the canner when I called my mom and told her how the tomatoes were so easy to do. Just when she told me did you bring the stewed tomatoes to a boil before putting them in the jars? No was I susposed too? Oh no! So we quickly turned off the camp chef and took out all of the jars. Back in the house I dumped the stewed tomatoes into the pan brought the tomatoes to a boil while Jeff took the jars and washed them again by hand and then we refilled them with the cooked stewed tomatoes. Put them back into the canners and we were back where we started an hour ago. It was 1:20 when all the tomatoes were done and we had only 2 that did not seal. So I have learned that my stewed tomato recipie needed to have clearer instructions so that I don't make the same mistake next year. Previously we have canned enough for 2 years and then I forget how it is done and figure it out each time. It is crazy, but I can't stand eating any other stewed tomatoes. I have even converted Jeff to the point he doesn't like the store bought stuff anymore either. :) Mission accomplished!!!
